The food of Nagaland is known for its unique variety and taste. Nagaland’s food is somewhat spicy because of the use most famous chilly raja mircha in their cuisines. Bamboo Shoot
Bamboo shoot is an important ingredient in almost the whole of the North Eastern part of India. It is mainly used in pork preparation. The Bamboo shoot is used in both dried and fermented form. It gives a little sour flavour to the dishes.
Zutho
This is the famous rice beer from Nagaland. The technique of fermentation is used quite often to prepare pickles and drinks in Nagaland. Zutho is one such fermented drink made with rice. This whitish and porridge-like drink is popular among the Angami Nagas.
Beans Mix
This healthy earthy mixture included beans, tomatoes, peas, cabbage and all sort of other natural Nagaland ingredients. It was a delicious concoction that wasn’t overly strong in flavor, but more of a garnish for rice and intended to be eaten with other stronger chili sauces and curries.
Galho
Galho is a soupy concoction of rice and vegetables or meat. It is somewhat similar to a North Indian khichdi. It mostly used an assortment of seasonal greens and is flavoured with smoked pork or chunks of pork fat. A vegetarian galho is a very simple dish often garnished with just ginger-garlic or nothing at all.
Aikibeye
Aikibeye is a dish that comprises of Mustard leaf and Colocasia roots. This dish is cooked with very little salt and no spices giving it a bland flavour making it perfect for being eaten with the flavorful and spicy Non- Veg dishes of Nagaland. Very little water is used as this is mostly preferred thick.
Summary
A normal Naga food meal would include rice, some kind of meat (either dry or pork with bamboo shoots), boiled vegetables, and spicy chili sauces. Just like Sri Lankan food or Indian food, meals are eaten with your hands.
