It is&nbsp;mainly used in pork preparation. The Bamboo shoot is used in both dried and fermented form. The&nbsp;technique of fermentation&nbsp;is used quite often to prepare pickles and drinks in Nagaland. Zutho is one such fermented drink made with rice. It was a delicious concoction that wasn\u2019t overly strong in flavor, but more of a garnish for rice and intended to be eaten with other stronger chili sauces and curries.<\/p>\n\n\n\n<h2><strong>Galho<\/strong><\/h2>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" width=\"251\" height=\"201\" src=\"https:\/\/indianonly.in\/wp-content\/uploads\/2021\/06\/image-202.jpeg\" alt=\"Nagaland Food\/Cuisine Specialty for tourists\" class=\"wp-image-1628\"\/><\/figure><\/div>\n\n\n\n<p>Galho is a soupy concoction of rice and vegetables or meat. It is somewhat similar to a North Indian khichdi. It mostly used an assortment of seasonal greens and is flavoured with smoked pork or chunks of&nbsp;pork&nbsp;fat. Very little water is used as this is mostly preferred thick.<\/p>\n\n\n\n<h2>Summary<\/h2>\n\n\n\n<p>A normal Naga food meal would include rice, some kind of <a href=\"https:\/\/food.ndtv.com\/recipes\/meat-recipes\">meat<\/a> (either dry or pork with bamboo shoots), boiled vegetables, and spicy chili sauces.
